ROASTED PIG
A Fresh Dressed Pig is rubbed down with our special
seasonings and the cavity is stuffed with a very unique
meat stuffing. Then it is slow roasted and brushed with a sweet Chili Barbeque Sauce.
WHEN FINISHED, WE MOVE IT TO A CARVING STATION AND PROCEED TO BREAK IT DOWN AND PLACE THE SLICED MEAT IN CHAFING DISHES. TO THIS WE HAVE ACCOMPANYING BARBEQUE AND HOT SAUCES TO CHOOSE FROM
PULLED BAR-B-QUE PORK
Tender pulled pork that has been slow roasted overnight then mixed in a tangy "mop" sauce accented with spices, chocolate and coffee, Crusty hard rolls are placed on the side along with Sour Cream and Shredded Cheddar Cheese.
